From what I have experienced, yes it does. I have crushing claymore + 5 with a faith/str build, and my strength is less than 30 and the claymore deals over 300 points of damage.
By the way, the best way to farm grey stone shards and chunks is having PBWT in world two, warp to the Flamelurker arch stone and then kill the 3 rock worms guarding the hands of god, and then kill the other 3 to the left. Use evacuation or run back to the arch stone.
Seance and repeat.

If you have high strength, crushing weapons will always out-damage +10's. Don't make a Crushing Greatsword, though, just use the DBS.
