There's an old computer game called Mount & Blade which has an option to adjust the speed of combat. I don't remember the exact settings but I think it was slowest, slow, normal, fast, and fastest. All it does it adjust the quickness of attacks and blocks, and thus can either increase the challenge against your reflexes or reduce it.
Do you think that if something like this was in DKS you would enjoy it? I guess in a way it is a difficulty modifier, so the slowest setting should be as DKS is now. It seems that a popular thing to do for long time players is to do "challenge runs" and this could be an actual built in way to do that. So after you have gotten pretty good at the game you could speed things up for an extra challenge. Everything, your actions and enemies, are adjusted on the same scale.
As for the PVP application, I don't know exactly how it would best work. I wouldn't want to split players into which speed they are playing at. Maybe when any type of multiplayer is happening it reverts to the default speed.
