What about you guys? I've never tried to go below 40/45 because i suck at dodging and can get stunlocked easily. Would 30 be a good number?

31 would be better since you can take a 2h straight sword hit with that, on my fast rollers i go 42 or 62 but most of the time i can only get 42(or47) since str weapons are kinda heavy, 42 allows you to take two hits from a straight sword (one handed).

although i do have two tank builds, one with 121 poise and medium roll and the other 161 poise with fat roll

Well on my most played build I have 45 poise with mid roll. It's always been more than enough to get me by.

I use 54, so that 2H R1 of Greatswords won't stun me. It's great if I get hit by a running R1 dead angle, so that people can't chain regular R1 on me. It's also usefull to tank some attacks if I know it will lead me to victory.
Other than that I usually have 0, or low Poise. I care about aesthetics more than functionality.

I have 53 but if I really need the poise I slap on wolf ring for 93 ^_^

+93 for tanks and less than 40 for fast rolls. I don't bother with 53 poise anymore, and 62 poise is almost impossible while fast rolling.

I'm usually running at 40 or so. But, my Str build has 62: wolf/gargoyle helm/iron bracelet/hollow soldier waistcloth.

I'm using Wolf, Gargoyle Helm and Eastern Leggings. Rest is up to you. I've been told to use something else than Eastern leggings, but I usually wear Wanderer Coat and I like hwo it looks together.

I'd say 31 for fast roll, 61 for mid roll, and 91 for fat roll. Of course, no poise is viable as well, you just have to be very careful.
