How much is really enough? 1590, 1708 or is it safe to go even lower?
    Can a 135 be summoned by a 120?

I go with 1800, but 1325 works too.

Can you survive a hornetstab BKGA with 1325?

I'm not sure. It will be close. That's why I try to keep my Vit at 1500. You'll survive almost any BS (not including buffed weapons).

my sl 300 (and rising) does around 1255 on people in full giants with a bkga hornets stab. At 120-135, you can have pretty much the same defense as they do. i guess its possible, but if you do, you won't be in a position to really get back up from such a huge loss of hp unless they're just as low as you.

I used to go with 1325, but as of months ago I changed to going with 1100. Those 10 points you take off VIT can be used to for STR, since this stat has 2-handing bonuses. Which means you lose 225 HP for practically 15 scaling points for STR.

It goes quite a long way if I do say so myself. Having a ton of HP means you haven't learned the art of not getting hit, like how maximizing stamina means you have not learned the art of stamina management (because, seriously, most of the time maximizing is unnecessary since you will rarely even really get hit with a drain on stamina).

On the other hand, not getting hit probably means your opponent hasn't learned the art of not missing every attack.

Hey, my motto is: "Kill them before they kill you. So hit them first and hit them hard!". 17 STR and 27 STR is the difference between bad scaling and maxed scaling.

I think this next quote only applies when fighting casuals, or when facing a build that you outclass because you are its weakness by default.
