I see Dark Souls highlight videos or funny troll videos, pvp etc... on youtube all over the place and I'm wondering if I can do the same. Will it get yanked unless I put a "I do not own the copyright to this material" msg in the video description?

Yeah you can definitely do that. More than likely you'll get a copyright notice; you can choose to acknowledge it, ignore it, or try to dispute it. I just acknowledge it and the worst is that my videos can't be viewed on mobile or in Germany (don't know why Germany specifically 
).
