The best things in the changes, summised for you:
Backstabs have been changed to combo- can escape a BS
Can shoot bows while moving, bows fire faster
Dual wielding proper has been integrated into the game
The physics engine has been updated- dem capes
Torches will be used in place of shield when moving through dark areas
Not gonna tell you stuff people have been saying based on .2secs of a clip as its just speculation, but those are the main points.

some other cool confirmed things:
a boss that summons "human" helpers that will likely be other players if online
great club knights that are bs proof
spells now have r2 variants that are stronger but slower
miracles get a dark orb esq spell
sorcery has fire magic (but pyro may still be around as well)
magic casting recovery items
the return of sticky white stuff though its blue and "aromatic" and called something different
items called lifegems that heal but have a long "use" animation
estus confirmed to return
and now a list of possibilities that are as of yet unconfirmed:
removal of toggle escape
miracles being cast with certain shields (heavily hinted at and maybe confirmed but I haven't seen it)
the ability to deflect projectiles with weaponstrikes (in a clip a warrior deflects a giant thrown axe by swinging his sword, then when he tried to block the next axe it split his head in two.)
