I just started playing again this last week and love the game but I had one question (well, probably more as time goes on). Can you play in Human form while offline?

Yes, but you have to disconnect from the internet. There is no setting in the game, that I am aware of, to ignore the on line component.

So, if I am on PS3, after I start the game, if I go back to the XMB I can just go to connection settings and turn of my internet connection or also just sign out of the PSN? Sound correct?

You just have to sign out of PSN, that's all. It's best to do it before starting the game. Oh, and say "No" when the game wants you to sign in.
