The attack patterns are but it's pretty interesting to me that they have a stalk method that included testing your ability with a lone hunter then upping the ante. Also I love their smile
The trees get the nod because they've helped me numerous times thanks to their dirty secret that, if positioned right, they can strike a ganker from outside wog range. Nothing funnier than a a guy spamming a spell with all his might while he's surrounded by trees intent on getting the last pimp slap in

By far the coolest enemies are Black Phantom versions of all your favourite ones 
Mine are ; BoneWheel-Zombies , Egg-infected guys , titanite Demons , Toxic dart-blowers , Capra's... can't make my mind up

Mushroom guys add a fun contrast to normally so serious look of the game.
Mimics are awesome just because you'll never forget the first time you got eaten by one.
Blader Knights were the first challenging enemies to fight and look cool too.
