Depends on what kind of weapons you like.
Starting as Pyromancer, I made a SL20 anti-griefer that I leveled dex and str just enough for Claymore, then I put the rest in End and Vit.
I use a Divine Claymore, and the two spell slots for Chaos FIrestorm.
Divine because I have not beaten Gargyles or Capra Demon, as I like to wait at one of those two places to get invaded. I'm starting to work my way up Blighttown backwards so I can do the same with the Gaping Dragon.

Idea: be good at PvP.
Stats: depends on your style/expertise.
Soul level: level up to about 25/30 and never leave the church.
You will be invaded constantly and you can also be summoned regularly at that level. Although when summoned you should use level appropriate weapons in PvE, only break out the big guns for the twinked out invaders.

My anti-griefer stats may not be ideal, but they work for me, here they are:
SL 23
Vit: 15
AT: 10 (1 slot)
End: 15
ST: 16 (for claymore)
Dex: 10
Res: base
Int: base
Fth: 20 (for Lightning Spear)
Ring of FaP and Wolf Ring, with Elite Knight hands, Hollow Soldier waistcloth and Thief Mask, leaves me still with a fast roll, but 53 poise. 120 stamina and 818 HP.
He is a SunBros, and when summoned I like to use the lightning on the Gargoyles. They "only" do about 300 damage at their minimum faith, but I just think they are cool and level appropriate.
He wields a +5 Claymore, (and the Grass shield), for PvE, but when his world, or his host's world is invaded by a griefer I break out a +5 Chaos Claymore.
I win about 75% of my encounters I'd say, and of the 25% I lose I'd guess about 15% of those are because my host gets panicky, lol.

just a question though, what if you run into a regular non twinked invader? are you still going to crush them with fire and lightning?

No, I will let them kill me. This toon will be only for this, I had run into too much griefers and they beat the hell out of me as I dont like using the glitch, so I'll make them pay. I think Im going with a large club. I think chaos.

recently i've been making low level gravelords for the burg and using vamos to make fireweapons, does that constitute griefing? (considering every 3 seconds i get a twinked out red and run out of eyes really fast...) one guy bowed and when i did the same he ran around and bs'd me... the vengence spirits are at least nice or new to the whole gl thing and don't know their supposed to kill me

I dont think that's griefing, but the newbie that invade you will fear to touch a gravelord sign again if you clearly have an advantage. I suggest that you throw them an Eye of Death so that they know more of the cool covenant, and if you want, let them kill you.

i just have so few eyes... maybe i'll drop basic fire weapon for them to use since im always running by vamos, maybe a short sword or dagger at+0 fire... until i get more eyes any way...
also my dad also has a low level gl toon for the burg, he ran into some dude with a maggot head who gave him six eyes... also at lvl 7 (my dads toon) we don't see many griefers but up at 10 or more you begin seeing them...

My parish anti-griefer is sl 19, very similar to lextune's build with 16 str for the claymore, which is also enough for a black knight shield (since most griefers in the parish/burg use a lot of pyro since it requires no stats). For similar reasons, max pyro glove and some good offense can work. I also like to carry around a lightning spear for fights in the hallways. The rest goes into vit and end. It is possible to do a faith or int build that gets some good miracles/spells, but you'll have very low hp and stamina.

My sl 25 anti-griefer has a Chaos Warpick +4 for a weapon, Dark armor and leggings, Black knight shield, DWGR and hornets. I BS a Giant armor griefer for ~800 and hit him for ~110

The most important piece imo is the Hornets ring, If you can OHK the bastard it's much safer and more vengeful. If I'm summoned I stand by and let the griefer run at my enemies and Backstab him when he's not looking.
