Did you try summoning knight solair to help you with the centipede. He makes a good distraction and you can get in some nice attacks. I usually go with strong magic (crystal souls mass, soul spear, and regular soul mass). But if your not much of a sourcerer than just try to use a strong weapon and dodge his attacks.
