Sorry if this sound stupid, but I am honestly confused. I have the greatsword of Artorias, and heard that it scales with your parameters. What does that mean exactly? And what do the rankings mean (A, B, C, etc.). Thanks for the help!

Ranking is how much stat scaling you recieve, this is how I look at the rankings:
If you are using a DEX build (most points dumped into dex) then you want a weapon with at LEAST a B ranking in DEX, A is better, S is best, same for your other stats. The higher the stat scaling, the more damage you do added onto the base AR (base damage).
Parameters are the requirements for being able to use the weapon, they do not scale, because they are simple requirements. The Uchigatana, for example, needs 14 STR and 14 DEX to weild 1 handed effectively, and has a B stat scaling in DEX, so this is a good weapon for someone investing alot of points into DEX (I usually cap at 40, then move to END and VIT) I can explain why I cap at 40 for DEX if you want to hear about diminishing returns as well, hope this helps! if you got any more questions just keep em coming!

If I have 10 Strength and the weapon I am using has a parameter bonus to the Strength stat then my character will deal more damage with said weapon at 40 Strength.
In ascending order - E, D, C, B, A, S. S scaling is the best and E is the weakest, it is the rank of scaling which determines how much more you'll get out of your weapon as you level up the relevant stat.

An 'E' or 'D' scaling is usually not worth the stat investment, since the payoff is too small (E in particular).
'C' ratings can give a big payoff if the weapon has a 'C' for both str and dex, since both stats contribute to the same damage type.
'B', 'A' and 'S' ratings have high scaling up to 40 in whatever stat it governs.
Scaling is also dependent on the base damge of the weapon, since you get an additional percentage from the scaling.
Some approximate numbers (40+ stat investment):
E = 0% to 20%
D = 20% to 50%
C = 50% to 80%
B = 80% to 100%
A = 100% to 140%
S = 140%+
