Obviously a shotel, with a parrying dagger on backup, with the embraced armour and ring of FAP (hehe) and the red or blue tearstone ring, but would it ruin the lautrec theme if I used a shield, since Carim warriors fight without shields? Also, are crossbows and bows out as well? Does lautrec ever use them?

I think he only uses 2 shotels and can swap to a parry dagger in the offhand, don't recall him having anything else.
If you are going for a complete Lautrec most likely. If you don't really care about being perfect go for a shield. I see no reason not to use a bow for PvE most so for certain hard spots.

I was just wondering aout the shield since only parrying would make the game hard as *** (e.g anor londo, dukes archives, bloody tomb of giants GOD DAMMIT). What shield would you reckon a man like lautrec would use?

i go through the game without a bow or shield.....not that difficult, just time your hits

I suggest a shield that looks cool with his armor, and small, try out gargoyle or Egigy shield
