I'd have to go with Artorias simply because in lore, he's the biggest BAMF out there. Goes to save Oolacile with his trusty compatriot, and when he's being overwhelmed by humanity sprites his first instinct is to use his shield to protect his friend before succumbing to the abyss. Even his title "the Abysswalker" is just beyond badassery.

on the subject of domhnall i believe he's a.... er..... "special" being in dark souls (for lack of a better word). the thing about him following you and making replicas would be believe-able, if not for gwyns armor. at the start of NG+ EVERYTHING in the world is reset, aside from your characters stats/armor/etc, but on beating the iron golem, he appears at firelink, and has gwyns armor. but if he follows you to make it, how does he have it? the world reset, so that would never have happened. somewhere in the lore section it was mentioned his name means something along the lines of "world ruler" or something like that. honestly, i think he's somewhat of a godlike being (not like gwyn and the rest, i mean it in more of an omnipotent/omniscient fashion)who took an interest in you, for doing something others could not. he probably thought "i wonder what made this one different" and decided to observe and reward you, as your achievements grew.

Solaire, not only does he gladly help you more often with summon signs than any other npc, but almost all of his combat ability and prowess is from skill, training and determination rather than specialized equipment. He is awesomely skilled and happy to help, with no expectation of reward. I think he might be the only npc who acts like that, besides maybe Gough.
