I suppose we all have a specific boss which we hate. I hate the Fire Sage demon. I mostly die one second after entering the fog door (in a way this is nice as I can recover my loot from outside the fog door...) I survive longer if I use Iron Flesh, but than sooner or later it runs out, and I am still stuck in the corner, vulnerable. I could use some advice (or summon signs). Here is my stats: 12 VIT, 8 END, 50 INT, 14 DEX. I won't change this BTW, I want it to be stuck at level 50 forever. Also, it's NG++. I try to roll as he jump on me, but I just can't avoid his strike. One-second one-shot death is getting old quick... Some useful advice would be appreciated.

If it were me with those stats I would dodge him the instant I come through the door and set up a Pursuers/Homing Crys. Soulmass and fire magic at it to kill it fast.

The big thing for you is that your going to have to dodge very late to miss his leaping attack as it would break your guard. If you can get the Dark Wood Grain Ring that will help you a lot as would a weapon with a good bleed preferably the bandits knife.
You'll want to buff the bandit's, cast anything like crystal/soul mass and the second you cross the fog run straight for him. you usually have enough time to get behind him before he casts his magic but back up if he does so before you can get behind him. Once you do Stick to his @$$ and dodge back if he uses the ground pound or magic attacks but don't let him turn and face you.
You have to fight him like you would the stray demon and he goes down eventually.

As a mage, the Demon Firesage can be taken down easily because of it's weakness to magic. The recommended steps are the following:
Equip a shield with good stability and enchant it with Magic Shield (Greater Magic Shield for better effect) .
Enter the Fog Gate, cast Homing Soul Mass (or Crystal Homing Soul Mass) and immediately raise your shield to block his jumping strong attack.
After blocking his attack QUICKLY run behind him to dodge his Wave Attack, after this, you are free to cast another Homing Soul Mass (or CHSM) and Souls Spears (or Great Soul Arrows).
Be careful, stay close, and run behind him when you see that he is going to do a horizontal attack, this means he is going to follow with the Wave attack. If you're too far away from him he will do the jumping strong attack. Block it because it's very hard to dodge.
Rinse and repeat until he dies.

I wish there was a "Level 50 club", I like to coop on NG+ and beyond at mid-level, makes the task more interesting. Some places it is very difficult to find someone to summon or to be summoned by someone at this level.

I don't have the STR to wield it, and anyway my problem is not lack of strong attack, it is the lack of VIT, I am a good candidate to be one-shot killed by many enemies now. Strong Magic Shield is most helpful at this point, and good coop partners

If you have the DLC you could be ripping him apart with spells with those stats, as Pendant said. Close range Dark Beads do a massive amount of damage, as well as Pursuers, Crystal Soul Spear, Soul Spear, etc. Fight him the way you fight the Stray. Go through the gate, sprint right at him and to the side, then do your best to stay behind him. Helps if you don't lock on unless you're about to attack, which you should only do once he's in the middle of one of his attack animations that you know you're safely away from.
You don't even really need to both blocking or rolling, though when I do this fight I generally keep my shield up when I'm running around anyway, just in case. He has a pattern that's pretty easy to read if you can manage to stay behind him. If you're standing too close, he'll fly upwards to try to splat you under him, in which case you just need to run away from him, then can respond by digging into him with spells when he lands; and if you aren't too close he'll try to spin around and either melee you with his catalyst, or blast you with his AoE, in which case you just continue to sprint behind him, and if you get lucky enough to not get blocked by one of the big root structures in the arena, you'll have an opening to attack him from behind while he's doing either one.

As guys here suggested I bleeded him out, but with a katana as my SL 50 toon has too little End to handle Scythe properly and I got only Chaos one, which wouldn't do much to both of them.
I've got one character locked on SL 50, so I can help you whenever you want, but it has to be around the same time as today.
