So, according to Wikipedia, hipsters are people who don't know how to define themselves so they disagree with everything established. How does this have anything to do with DKS players?

Exactly, the term now had no meaning whatsoever. People throw it around as labels to things they don't like when they fail to bring up any constructive criticism.
I think the question should be : Are we gamers?

Words change, their meanings evolve over time. A word that was created in the 90s, especially such a vague one to designate a culture in such flux, will obviously not be interpreted the same 2 decades later.
Do I even know what the proper definition of a hipster would be nowadays? Actually, not really, no. But in the context, and interpreting the intended question of the OP, one can easily understand what he meant by using it.

This. It's an interesting enough question, and 'hipster' is, IMO, acceptable as a metaphor. I think it basically comes down to one question; do you recommend that people try the game, or do you tell them that it's too obscu-- sorry, hard, and that they probably wouldn't like it?

I think hipster really only applied to the people who played Demon souls from early on and were the same ones who jumped on the dark souls band waggon from day one.

I do consider myself a Dark Souls hipster, but only because I got the game on release day and can tell people things about what it was like before the first patch, and so can say things like this:

How many of you know what the Crystal Ring Shield is? And who all remembers how overpowered it used to be?
Pssh, I had to FARM for my Twinkling titanite.

Release day? I got it the day before release day!
Funnily enough, I got it for free too. I was working in Gamestation, and my last day just happened to fall on the 4th of October. Dark Souls came in the delivery, and my co-workers clubbed together to buy it for me, knowing that I'd been waiting for it to come in all week. Best leaving gift ever.

I don't think I'd be able to work in a games shop. I just don't have much connection with the average gamer, let alone the casuals. It would be hard for me to make recommendations because of that. I'd just tell everyone to get Dark Souls!
