What always confused me is this:

If the Japanese lag on our servers, why don't we ever lag on their servers? I'm sure we can invade them.

    Any thoughts/explanations?

We do lag while they are hosting. Though remember, Dark Souls uses a P2P system and not servers.

The term Japs can be offending. We have many Japanese members here, including a very important one. Just sayin'

My bad. P2P, right. But I'm always wondering how non of my hits hit, but they lag hit me with G. halberd or something. It's kinda irritating.

The term "Japs" is offending? That must be why it blocked out the singular version. My apologies, i was not aware. Sorry, Fex.

I would put that on my opinion that Japanese players in general are better than those of other areas.

It's not because of ethnicity, birth, hell not even culture really. Demon's and Dark Souls are games by a Japanese developer, and both games are more popular there where in other places they don't seem to be. Similar to how Starcraft and Korea go together. It's not a racial thing really, they game is just really loved there.

So if you find that on average, Japanese players are better at hitting and dodging from you, that could be why. Just my opinion though.

Now if it is more so that you notice way worse of a connection, well distance between players is the cause of that.

I don't run into too many players from Japan on Xbox, but I've noticed that both lag and skill are present when fighting them. The following statement may not be true, but I think Japanese internet connections are superior to North American connections as well, making them even tougher to beat.
