Thing is, I can't decide if 40 strength is worth the damage you get from stat scaling (planning on going +15 normal). Would the damage input be similar to a 40-dex build? I also plan on using SLB to buff my weapon, with some additional miracles as backup. As for armor, I'm just going to try to reach 70ish poise with whatever I have when I get to SL 120-125.

A Demon's Great Machete+15 will have 636 AR with 40 Strength. If you chose to 2-hand it will have the same 636 AR with 27 Strength. Something you might want to consider.

That tied with Dark Moon Blade is probably the best non-crit damage output you will get at that SL.
