I never could understand the purpose of different builds. I hear people go on about their glass cannon build, or faith build, intellegience build etc...but i never really understood why people like to make different builds. I've always used the same stats since the beginning of time. And when i wanted to do everything i just leveled up. Is it like some sort of mentality or something because i always thought that whatever works best for you is what you should do.

Because the standard for most PVP sets is SL 55 which doesn't give much room for players to switch equipment if they leveled up their stats for a specific weapon that they wanted to use.

I need to for the standard PvP levels and it is fun to experiment with different things while limiting myself to certain things. It is to be creative and bring a challenge.

Builds are fun.
If you want to do random invasions or have fun in certain areas, you can create builds to suit the invasions well. For example, an Intelligence build may do well in the Tomb of the Giants because you wouldn't be able to see when the person was casting until the attack had been fired and the light appeared, it's good for playing with people's minds.
But you also have to take into account that most people are level X by the time they get to the Tomb, so you would level up your build accordingly. This lets you play many different types of fighting while still getting the maximum amount of invasions possible, and is really fun if you're playing Dark Souls for PvP, just trying out a new build, or if you're just bored of PvE.

Basically this^. They're either for pvp or for challenge runs. For instance, I'm creating a SL 30 Gwyn cosPvP build to invade in Sen's and Anor Londo. If I leveled all the stats I wanted for that I'd approach 150, and then I wouldn't be able to invade up to people going through Sen's and Londo.
Note: I don't think the build is unfair, it's as close as I can get to Gwyn, and so I feel the upgraded weapon is fine. I'm exclusively using the Greatlord Greatsword and his armor set. No shield, low vit, low stamina, and no poise.

I like both designing builds and trying new playstyles. I get bored with one playstyle and want to try another. Plus, I've found that certain weapons don't fit with how I can play, so I make another build.

Because if you level up too high the game gets easy and you win everything because generally only lower levels invade you. At SL100-120 or so PvP is more balanced.

Because keeping some common known PvP cap (SL 100 -130) keeps things somewhat in balance and we can avoid all those builds with max in everything and have some more variety and imagination.

What's the point of builds? Unlike you, others aren't satisfied with a completely static, boring life of monotony in video games and would rather explore possibilities.

Its all about pushing boundries. Finding new ways I can win, and building to include a specific set of those win conditions. Only a few can be included in each build or the build loses focus and fails.
Its also a training exercise. If I know how to use a greatscythe properly, I'm much better prepared to defend myself from one in an opponents hands. I know what the smart thing for them to do in any given situation would be, and can counter appropriatly.
Finally, its that I don't always want to play the same way. Combat is very nuanced, so a change in weapons/armor can completely change the feel of the combat. As effective builds are focused, multiple builds are a necessity if one intends to make effective use of different play styles without sacrificing effectiveness
