I have the Covetous Gold Serpent Ring already, and I have 10 humanity......but I was wondering if any of the masks (Mask of the Father/Mother/Child) did anything? Or is there another piece of equipment I can use to boost it further?

It can't go any further than 410, although you can get a mimic head randomly off one of them and it will give the effect of both rings in exchange for draining health, however it will not stack with the gold ring but will with silver.

do other things affect item discovery besides that gear? e.g. not getting hit, using a certain attack/weapon etc...

Nope, just Humanity (up to 10 I believe now) and those two pieces of equipment.

Yeah that reminds me of the time I first got the mimic head. I put it on with gold thinking they would stack. Farmed for about 20 minutes before realizing that they didn't.
