Had people stand still and try to parry it only to fail like 10 times in a row against an off hand dark sword. can you even parry a left handed weapon? or did his timing just suck? i guess itd make sense because you're attacking from the opposite direction (aka his weapons side not his shields).

You can parry a left handed weapon. I've been parried while using an off handed katana.

You can parry anything but whips my greatshield got parryed
