The big problem with that is money, joe. Remember there is ALOT of background politics happening when making anime. One major thing is paying for the animators, which for something like bleach, is PRICEY if they just do it in one LONG run. So you'll have these slow episodes with no action and the characters playing happy grab-*** and reused scenes to save money.
If it was broken up into seasons, they would have more money and better quality, as well as a more tightly held story without any breakpoints.

That's why flashbacks and recaps are so common. Very little work required, voice over, and a black and white filter. Done.

I always like it when a series has a distinct end in mind, and when they aren't dragging things on. That's why Cowboy Bebop is one of my favorite Anime of all time.

The overarching story is the search for 'the samurai that smelled of sunflowers' but for the most part it's a bit episodic, like cowboy bebop.

Uh...Let's just say its regarded as one of the greatest Anime of all time, it has universal acclaim. It is easy to get into, and it's not exactly a western per say. It is also a Noir, it's sort of a combination of things. Missing out on it I consider denying one's self pleasure.
Another series I really love, which I never actually find others who enjoy though, is Ghost in the Shell. That goes hand in hand with Deus Ex for me.

Bebop isn't exactly Sci-Fi. it isn't about super high tech devices and explanations of them, or really using them as plot points outside of a few minor things. It's about the people in it, not the devices. Ghost in the Shell, now that is full on Sci-Fi, a Cyberpunk. It's all about the tech.
