Is it really not dependent on region? I mean I have the Asian version and I've cooped several times and they're all Japanese. I thought it would be global? But then again, one of them spoke perfect comprehensible English, not sure if someone from another region or its because he has really learned the language.

Dark Souls is in no way region locked. Demons Souls is, but not dark.

Location : Sitting here in limbo, but I know it won't be long. Sitting here in limbo, like a bird without a song. Well they're putting up resistance, but I know that my faith will lead me on. Sitting here in limbo, waiting for the dice to roll.

Time of day, dictates when you'll play with players from certain countries. Japan, I think is -9 hr EST, Like. Morning here is night there, if you time it right you can tell it's mid afternoon and the kids are on. I see players from everywhere. Kinda neat.
