I'd honestly go with Greatsword in the offhand and a Caestus in the mainhand for that. (Funny thing is that it works on those with low poise)

Even worse, I start the comboi off but the DWGR allows them to escape it faster! The I-frames do the rest after that, of course.
I find it funny when a DWGR user toggle-escapes. I fought one of those good players last night that toggled every time they got hit, but I was following up with another swing to hit him again each time. His toggling prevented him from just rolling out of everything.

Also, they locked on? Why do that? Unlocking would make much more sense, if there's gonna be a follow up.

No problem. I guess I revived you from the dead, taking you off the cold, damp floor of the Moonpit, and dragging you into here.
I would say unlocking would come into play after taking a hit, needing to get some space, or having to flee to a better, more suitable position. Locking on comes in when going in offensively, or going for a pivot bs.

Now that I think about it, I unintentionally lock off when toggle escaping unless attempting a toggle parry. This guy was unlocked, though, he just couldn't roll away quickly enough with the toggle already input.

After I got used to input delay and the order of weight that each input holds things got much simpler. You really only need to know that toggling's animation takes priority over every other animation except for being splatted or launched, DWGR is OP for many reasons, and many things (see: exploits) can be done during a roll.

So, it's mainly a matter of some actions prioritising themselves over other ones, and therefore, the effect of that action will come before all others?

And that's exactly why I like to think toggle-escaping is a legit tactic and actually adds to the game. It's been around since Demon's, and there are so many tactics you can use it with. Pro-tip: toggling while using an attack with a long recovery time, like an ultra greatsword R1 or hint-hint: the Great Scythe R2, will allow you to immediately escape a stun if you timed your attack badly.
