From Soft are truly amazing, real attention to detail, I think even Sif's face/eyes looks different when fighting, it looks like a "sadder" expression.

Sif just doesn't want to see you (who saved her) to fall to the abyss like Artorias did. ;_;

Only reason I see why we have to kill Sif is cause she ate the Covenant of Artorias and you have to gut it out of her sadly.
