What level? Ornstein's Dragonslayer Spear is pretty hefty on its damage stat requirements. It scales well with three damage stats, but getting the most out of it is tricky given certain level restrictions. You will, at least, require 24 dexterity -- that's the easy bit. 16 strength will be enough to two-hand it, but it gets messier when you need 24 strength to one-hand it. Then there's scaling to worry about. Going to 27 strength is probably a good idea, to get maximum damage out of two-handing the thing, but whether you bump up your dexterity for the physical damage or your faith for the lightning damage is up to you.
Just remember that if you're doing an Ornstein build at SL100, you're probably looking at giving up some HP to get the most out of your damage stats. Let me see if I can't run it through Mugen Monkey and come up with something decent.

A bit squishy, but it gets the maximum physical damage potential before diminishing returns out of the Dragonslayer spear and maintains fast roll, plus Ornstein's full armour set. Unfortunately, the weight and endurance requirements of all this stuff prevent it from both having a shield and fast rolling, so I've opted to have it go without. If you use this build, your defense will be the length of the Dragonslayer Spear and your dodging invincibility frames.

You could try this. Vitality is raised to 40, faith to 20 and it has an extra point of endurance. That extra endurance allows you to put a Dark Hand in the off hand for a shield when you really, really need one. It's by no means a shield that can take heavy hits, but it has an even 80% damage reduction across all damage types and could save you from a few bad situations. Furthermore, when you're not actually using it, it's invisible, so it doesn't alter the Ornstein look with a shield he doesn't have.
