If your main weapon is the silver knight spear, then going above 16 strength is a waste of stat points. Taking dex to 40 is a better choice, you could even go as high as 45 for (marginally) faster casting of pyromancies. You should also get your health up to 40-50.

Im actually thinking of makeing a Dex Build. (Estoc, Rapier etc) but im un-sure since having low Int and Faith may Backfire me (No healing etc.)

If you're confident in parrying obvious attacks a +4 crystal rapier destroys on true dex builds and really shines if your willing to carry a stock of each resin for a little boost. Definitely pump points into Vit and consider capping at 100 for some arena action. Also use a cloranthy ring instead of Steel, the extra defense doesn't compare to having another attack or roll in a pinch.
