Any point in 2 handing elemental weapons?

So stat scaling disappears when you take the elemental path with weapons right? And using a weapon with two hands doubles your strength so with no stat scaling wouldn't it just do nothing?

P.s. elemental is only a good alternative or for some pve situations. Typically just got +(as high as you can)

Sometimes yes sometimes no, it seems a few weapons don't get a damage boost for 2 handing back stabs and ripostes however there's still the alternating moveset and 2h heavy attacks will maintain higher damage and poise breaking.

In my experience there is typically no increase in damage in 2-handing an elemental weapon. An R1 attack will do the same damage one or two handed since the AR is the same. R2's are different however because they have core damage modifiers to make them stronger than R1 attacks by varying degrees based on the weapon. In terms of R1 spamming for consistent damage, you're better off just one-handing as it will save you stamina, but your most powerful attack will still likely be your two-handed R2 due to the damage modifiers they have, so it can be useful when needing to one-shot something.

I know the Chaos Gargoyle's Halberd does increase.

Chaos halberds, lucerne, and greatsword are all noticeably stronger 2-handed even though the AR may not change in your stats. I don't know if the 2-handing bonus only increases their regular damage and not the elemental part, but it does make quite a difference overall. Many of these weapons also suffered less relatively under the DLC elemental nerf in that their max damage still nicely exceeds typical defense ratings, so they're quite viable in PvP particularly at low and mid levels.

2 handing a weapon regardless of scaling increases damage. just like two handing Dex weapons that have no Str increase damage.

It's not a complete list, but it does show that 2 handing a non strength scaling weapon will increase damage.

This has been explained to death. The backstab and the riposte won't do any extra damage but the regular R1 and R2 attacks are ALWAYS stronger when you 2-hand any weapon, it doesn't matter whether it scales with STR or not.
