I remember when I came upon a tank in my older builds it was damn near impossible to bring him down. Mine dies from one backstab. Granted I havn't got vit up that much yet as he's not finished, but seriously! Is there even a point to be a tank? I may as well flip around in a ninja suit, dodging all attacks and backstabbing with hornet ring? What am I doing wrong?

Attack behind you to BS cancel, always, if they are even remotely near your side. You can offset maybe 80% of backstab fishes this way.
Giant's does not have nearly enough defence, you may want to do a google search for JerpDoesGames's fatroll tank build if you want something feasible. Defence in DkS is not very useful generally (Defence, not poise, poise is god), you really have to assemble the right things to make it work.

backstabs negate most of your defense.
Get a fast, wide swinging weapon or Force if you want to fight against backstabs.

Learn to kick bro. I responded to one of your other threads saying the same thing. jblackmel's videos on youtube demonstrate the awe inspiring effectiveness of the humble kick against BS attempts.
If your using a UGS or similarly slow weapon, learn to play in delock.
If your using a rapier do the kick equivalent for the rapier while delocked, it tends to work better that way.
If you've got a curved sword... I dunno I don't really use those a whole lot. Maybe I should make a Falchion build sometime

My friend actually made this build and he says that he kills pretty much everyone. Tanking, correctly, actually requires some skill as most experienced players can easily kill tank, whether it be by magic or a hornet stab.
If you are getting backstabbed then try using the large/great club or the dragon tooth for the roll attacks, both 1h and 2h are very good against BSs.
