a basic reason would be humans being the D###'s they always are, people will either have stopped believing in the gods or decided to out right kill and usurp their power. or simple boredom/disinterest of the gods would be another likely one considering the way the souls series works, in both demons and dark souls the god were two faced, in demons the "god" was actuallty the old one, the supreme demon and eater of souls. in dark souls the gods abandoned their cities when their power began to wain displaying cowardice or simply no concern for their followers and also have repeatedly been shown to be shameless manipulators.
