I love fighting Artorias, and I'm comfortable doing so but occasionally he kills me since I can't fight him consistently to stay up to date on my skills.

I actually killed Artorias on NG+4 with the Balder Side Sword today.
Tips: Only attack to punish a whiff he does. Roll under any attacks which go diagonal.

It's not so much the fact that I get hit, it's just the fear of being one-shot makes me jumpy and I always screw up the timings because of it.
Even though I say that, I've gotten to NG+5 with my SL 1 even though I was one-shot around every corner, and I didn't have good weapons for that build.
Or stamina.

You say that, but he can one-shot 40 Vitality. I also like to fight him while he's buffed, so when I say he one-shots me, I literally mean he does 1325+ damage per hit.

I can have tea with any of the bosses in the game at any other NG, their HP isn't a problem.
But once I get to NG+4 and beyond I start getting more nervous in each boss fight. By NG+7 I constantly second-guess myself which more or less leads to my death right away.
Don't know what it is seeing as I play better when I'm carefree, but it just seems to take all of my concentration on NG+7...
