Don't think there's many ways to miss the cut scenes. The only ones you can miss that i can think of are by taking the lost izalith shortcut and the bonus Sif scene(kill Sif before you finish the DLC). So basically don't the lost izalith shortcut and finish the DLC and free Sif there before you fight him.
I'm probably missing something glaringly obvious but can't think of anything at the mo.

Theres a cut scene for the shortcut? Ive taken it but I didnt think so.
and that Sif cutscene is so heart stabbing its good to miss it.

There's no way to experience every dialogue and cutscene in a single playthrough. There are several dialogues that, in order to unlock, require doing (or not) at a certain point in the game that makes others impossible. Also, Sif has two different cutscenes depending on whether you've saved him in the DLC or not.
