I'd think you would be sent back to Firelink Shrine and you would have to kill him again.

Power within i imagine. Good question though, would he stay dead, if he did would you get the dark lord ending because technically you went outside the door before lighting.

You die and spawn back near the Kiln bonefire. You can freely choose to leave the Kiln or link the fire. Gwyn stays dead.
Did this 3 days ago so I'm sure. (I used dung pies to kill my self)
I believe the same is true if you try to homeward bone out of there.

Once Gwyn is dead, you must choose an ending. There is NO WAY to go back. Dark Sign, Dung Pies, Power Within, Homeward Bone, Cat Covenant Ring, ANYTHING. You will simply go back to the Kiln fire.
