Low level GL actually isn't that hard. Start with the bandit. Use the GL sword, so raise your dex and str accordingly ( 24 and 13), but no higher. Then get end to 25. Vit to 20. Att to 12. Then either int or faith to 20, depending on preferences. Then, Viola! A 51/53 level build. If thats too high, lower your spell stat accordingly.

The Great Scythe is exellent in my opinion. The Lifehunter Scythe is good for low levels when stat scaling isn't as important. The bleed effect for the Lifehunter is devestating as well.

The only problem on the lifehunt scythe is the bleed build up on my side..while i know it isn't as much as the person your attacking it's still pretty high yes? And I'll have to try the great scythe!

I low level Gravelord professionally, if you could call it that, its more about successful anit Griefer Tactics.
What SL were you looking at? SL 20, 40, 60?

For 40 the best places I know are the Depths, Btown (you'd be surprised how many people just hate that place anyway and woul invade you a hundred times just to make it easier), the area with as you enter Darkroot Garden. People who forest farm and hunt farmers sit around there.
As for weapons. I see the Great Scythe working at that Level as well as the Gravelord Sword. Weapons have no real bearing on the effectiveness of your GL provided you know how to use what ever you wield.
As you are the host don't be afraid to use Estus. Its not fair or ethical but those who invade you are either really nice and drop eyes or out to kill you for revenge. DON'T EVER take chances with them for any reason.
Anti Griefing is only really for SL 30 below in the Parish and Burg so you won't have to worry too much, just make sure your weapons are good enough to face the greater majority of the other PvPers.
As you'll be hitting either exclusively SL 40 PvPers or SL 40 questers you should learn how to Dead Angle with either the GS or the Gravelord Sword. It helps. PLus if you can get a bunch of Poison/ Toxic items it will go well with your Gravelord feel and aid in making the enemy mess up more due to time constraints put on them by the toxic.

Dead angle is when you hit them to the side, ignoring their shield. Can be done with 2 hand or 1 hand attack.

Re: Advice on a build
I like the old wraith look in the form of Gold Hemmed Black Set or my personal fav that I run on all the Gravelord Builds. The Hollow Thiefs Armour and Hood, Leather Gloves, and Wanderer Boots.
That way I look like an undead version of Ezio form Assassins Creed.
As for rings I say the old Havels unless yu can sit below the 25% mark as you'd still get the fat roll, then tack on the Hornets Ring for those super criticals, you could also use the Wolf Ring for the extra poise or some kind of buffing ring for miracles or spells.
Is this for the low level Gravelord you expressed interest in. I can't remember much about the last hour for some reason.

Bro you don't have to say another word. PSN ID is ViralEnsign_. send a friend request so i can contact you more easily. Oh and post on the Covenant page. If you can follow the wierd format of introduction of yourself and character that somehow started it would be much appreciated.
