I'm thinking of using either the crystal ring shield or grass crest shield, otherwise I would greatly appreciate some creative criticism.

Amos is right. When people here judge to executioner they imangine an axe. However the build itself lacks vit, has too much attunemewnt (hidden body is a waste) and too much int. Id go with something like this - mugenmonkey.com/darksouls/?c=264383592
