I am currently wearing ornstein's armor but in PvP I wear smough's armor. Do I really have to wear heavy armor in order to survive?

No. I wear the Holy Clothes for the Starting Cleric. I use that armour, and I pvp just fine.

^^ Unless you're as good as him, you only need to worry about poise. I use the Pryomancer Hood and Chest with dark gauntlets and leggings and wolf ring. I only get stunned by things that should not be hitting me haha!

I've tested out MANY times in PvP in the forest that if you wear heavy armor while being backstabed, you don't lose a great amount of Hp compare to wearing lighter armor. Is it just the weapon my opponent is using?

There's your problem: You tested the Forest.
Go test the rest of the world, and get good at rolling... without a flipping ring. Then learn to not use a shield at all... then spells... then poise... then defence...

No, heavy armour does offer far more protection than lighter armour, as it obviously should. but it depends whether you wanna be slow or slightly ligher and faster

It is a combination of alot of things. Your armor, your opponents weapon, their rings. But, heavier armor with more defenses to whatever attack type they are doing when they hit you = less damage. But, the heavier does not always equal better.

It determines how many hits you can take before getting staggered and stunlocked.

Not staggering doesn't matter much, if you can die by one hit from a weapon that would stagger you without that poise... the poise allows the player to hit back without interruption, but it does not stop the interruption of death. Those one hits, you may want defence.
Do yourself a favour, don't say one is better than anther... balance it out if you want both.

Knight chest has a great poise to weight, and a decent amount of defense at +9
