The people still worship the gods. I doubt they know that the gods had a hand in the curse.

The undead would be seen as something of the dark, not realted to Gwyns relighting and its changing how the flame affects the world.

My theory only works if the darkness started in lordran. The first part is a real psychological phenomenon in which you begin with a love or affinity for something. In this case the gods. When betrayed by your love you turn to hatred in the sane amount you used to love. So the greater the love, the more hatred when betrayed. The second part hinges on the curse starting in lordran. This would start everyone blaming the gods and be the betrayal to spark hatred. Once that's rolling then there would be little hesitation to quarantine the gods with everyone affected. Remember too there's evidence of conflict between man and God. The flooding of new londo, the effigy shield's description, etc. But honestly ths is just what i've always thought and would likely absolutely only happen if lordran was the known root of the problem. So mankind reached a point where they said "we're better off without you."

Edit: just re read the posts and wanted to add that mankind wouldn't need to know any of the fire lore our inner workings of the gods for a quarantine effect. Just like us they'd fill in gaps. So in my case imagine if Buffalo, NY was known to house gods. If the suburbs like orchard park were the first to see undead and then radiated out we would assume Buffalo was the issue. I'm about an hours drive away and if we saw one undead here and wanted to stop out from becoming more we would drop them off where it started. Basically, all I give a crap about is not letting it happen here and rather than spread it further lets just ship it back.

Don't the other countries have their own gods? And doesn't most of the conflict between man and Lordran's gods involve men from other countries? Perhaps these two things are related?

Honestly we arent sure about the other gods. We know that many of the anor londo gods fled to Carim, thorolund worships allfather loyd and Gwyn, Astorans believe in the flame but may not support any god. But we dont know who the other gods are.

We don't need to know who they are, just that they exist for my idea of a link to work.

Also isn't Lloyd Gwyn's father?

He's Gwyns uncle, so likely the father of the first firekeeper. Although a non biological link, like makuta to mata nui in bionicle, may also be responsible.

Maybe gods in foreign lands are responsible for attacks on Lordran's gods, maybe even gods who've left Lordran.

You should also recall that most of the populace is most likely uneducated. It is a Medevil society after all.
