Door could have been locked after. Why do you need a Locked door AND a cage? Also, Why is the key in the belly of the Gaping dragon?

Perhaps they are "impure" descendents of dragons like the drakes, and they just changed more. Smaller, less complicated creatures would allow for faster reproduction, leading to more generations and more evolution. Just the thing a dying species would need (Ugh, this makes it seem like I don't get evolution...).
Gaping dragon was an everlasting dragon corrupted by hunger. This is from the director himself.

Dragon King Greataxe says he was a distant descendent of the everlasting dragons.

The developer says that he was a DRAGON that was transformed. Not specifically an everlating.
