First, let me say: BS spamming is bad, IMO. That means that the majority of your attacks are BS attempts.
Now, onto your question. I would BS them. Those weapons hit harder than you, and you'll lose if you start to trade hits (unless you have a LOT of poise and have a lit Falcion/kat). Their weakness is recovery time. For them to overcome this recovery time, they need to attack at the right moment, and manage distance. If they misjudge these, then they made a mistake and you can go in for an attack - regular attack or BS.
Example - Rant wields a Machete and wields it very well. He likes to do the roll R1. Instead of rolling toward you, he takes an oblique roll and R1. That is much harder to BS, since the roll angle is tougher, and more random. If I get too close for a roll attack myself, the will parry me or roll past me and BS or R1 (depending on the distance). He uses an R1 at the right time, usually by baiting a move. For example, he'll roll, but not do an R1. I assume he'll do an R1 and go in for an attack. He will then either nail me during the attack or roll obliquely and dead angle me. Compound this with excellent BS evasion - he sees them coming a mile away and adjusts his attack accordingly. Very effective use of a heavy weapon with a long recovery. GGs to Rant for kicking my butt.
If I mess up, go ahead and BS me. I deserve it, and can learn from it.
