You should be able to interrupt a gesture animation with a roll or movement.

No no, you misunderstand: you can't interrupt a Gesture animation. I'm saying they should program the game that you could cancel it.
Currently, if you do a gesture, you're stuck all the way through. Only another gesture will interrupt it.

Pretty much. Not you? This isn't counting when I'm engaged with another enemy, or ambushed. Just when I'm fighting 1 on 1.

Doesn't matter how good they are, HCSM fires and casts at the same rate. Also, I don't fight in the Burg, so I have tons of room to maneuver. I am almost always DWGR flipping around.
If I med roll or fat roll, then yes, I can be hit with those without lag. But fast roll? No way.
