When you upgrade a weapon into an elemental path (lightning, fire, chaos), you sacrifice all scaling for a fixed amount of base damage. (You'll do the same amount regardless of how high your strength or dexterity is.) I'll use one of my favorite weapons as an example, the claymore.
It has a C / C scaling in dex and strenght (meaning damage increases with points invested in both stats) To use it at near max scaling, you need 40 in both str and dex (or 28/40 str/dex split if two handing. ) That's a heavy investment.
It's base requirements are 16 str and 10 dex. Not very high. Once you attain this base requirement, you can choose to go elemental. Now, the weapon will do a set amount of damage that doesn't change based on scaling stats (dex and str for this example).
Advantages of elemental
Elemental weapons are more than strong enough to finish the first play through
respectable damage with very little soul level investment
at base level requirements, most weapons will deal significantly higher damage
Negatives of elemental
gets outclassed by +15 weapon with near max scaling
does split damage (meaning it has to bypass 2 types of resistances, physical + elemental)
you can't buff them (dark moon blade, etc won't work on it)

*edit* chaos is the strongest path but only if you have 10 humanity in your meter.
If you don't have faith in your ability to keep 10 hu, you may be better off with fire or lightning. Don't forget that enemies have their own set of resistances so performance may vary based on what you're fighting.
