You can get both the Sunlight set and the Maggot you know. Also, Solaire doesn't hollow, he goes insane. If you let him go insane, the bug that drops the Maggot will still be there. The only reasons one could have for saving Solaire are:
-Morality
-Jolly Co-op at Gwyn
