Personally for me, all of the great weapons are really going to be awesome to see. Runner-up would probably be whips and fists, they were so bland in Dark Souls, and I'm looking forward to what they do with them.

Polearms / Halberds. I've ALWAYS used them on my playthrough. Even Demons Souls.

I prefer the current vertical slashing myself.
The Demon's Katanas were just longer straightswords with bleed, more stamina drain (to the user), and an arguably better or worse 2h R2's depending on the situation.

IMO, just by looking at a Katana you can tell it was built for vertical slashing. Either way, I think the rolling R1 as well as the Iaito's R2 and Chaos Blade's 1h R2 make up for the horizontal slashes twice over since the are already pretty powerful.

Staffs are the light polearms, spears are the great polearms, halberds are the ultra great polearms. FROM Soft, GET IN HERE.

just from the game play vids axes seem to have a more fluid onehanded combo so thats good, i wanna see how they do crossbows, specifically; MAKE THEM MANUALLY AIMABLE!!!!!1!1!

If they can do something interesting with them then I'll say fists. DBF and God Hand were decent starts, but they still didn't do enough. I'd like to see it be a genuine fighting style instead of just the brawler kind of deal we have now.
Runner up for me would probably then be Great Clubs/Swords/Axes. Only because dual-wielding is supposed to be a bigger deal and I wanna clobber faces with dual DGAs
