Where are you gravelording and what soul level is your build? If you are gravelording to get PvP, pick an area where PvP is usually very active. Burg, Darkroot forests, Anor Londo, DLC areas are usually the best for me.
In order for people to see your gravelord sign, they need to be close to your level. I think the level range is the same as with white sign soapstone which is, your level, +/- 10 + 10%. For example, if you are SL 100, people from sl 80 to 120 can see your sign.
Using an sl 100-125 build is usually a good idea since most people who pvp actively like to stay close to those levels. Personally, i have used sl 100, 110 and 120 builds with great success. While using a low level build to curse low level questers worlds may seem intriguing, you have to think who is more likely going to invade through your sign? A quester trying to do PvE, or a player who is in the area to do PvP anyway?
Gravelording is great fun, just don't get upset if you get ganked. Instead take advantage of the unique mechanic and have some fun chaotic free-for-all pvp
