Thats actually what I expected DkS to be in the first place. Was disappointed when I found out it wasnt.

Nah I didn't thought that. I read an article that said that even though you could choose different paths, it wasn't as grand scale as TES. Kingdoms of Amalur is an open world game similar to TES, huge world map and tons of quests. It has a very good third person combat, but not as great and complex as DkS.

As long as it is interesting, I'd love to see it. Dark Souls may be small in comparison to Skyrim, but almost every single place is worth experiencing.
When I play TES games, I normally sprint across town to town if I can't fast travel. There is nothing interesting in the middle of the journey most of the time.

There's a surprising amount of stuff hidden in Cyrodiil and Skyrim. Not stuff marked on the map, just little fun stuff. I walk around and search for them occasionally. Also, some of the most beautiful environments I've encountered in gaming are just small, insignificant caves in some mountain range near Whiterun. Granted, Blackreach takes the cake, but that's in a league of its own. Keep in mind that I'm super biased towards TES, so take all of my arguments on the subject with a grain of salt.

Honestly, I probably wouldn't like Dark Souls as much if it was as large as Skyrim. They would probably have to dumb it down a bit just so it's not completely impossible with people traveling large distances with no stops.
