I've started a new character and have bypassed the Taurus Demon for the first time, since I usually kill it before progressing. I'm wondering if it is possible to reach Solaire to obtain the White Sign Soapstone if I keep the Taurus Demon alive.

Yeah, you just gotta backtrack a little. From blacksmith Andre, go to undead parish, past the fang boar, down to the rats, then back up on the bridge, run to the end of the bridge and you're there.

Thanks! I was worried that going "backwards" through fog doors would cause issues, like falling through the floor (which happened to me one time during PvP)!

You don't need to cross any fog doors. You can go through the gate, or jump down from the bridge. That's the beauty of moving in the wrong direction, you can use all the shortcuts Note that 1 of the undead guys will try to close the gate though. He doesn't respawn if you kill him.

Actually if you make it to the sunlight altar while the Hellkite is still there, it will leave and won't come back unless you leave the area or die. Actually, if you go through New Londo to the Valley of the Drakes, to Darkroot Basin(You'll end up here if you go through the Burg via the bottom of the tower anyways) And then the Parrish, I've heard the Dragon doesn't spawn since you didn't trigger it landing on the bridge. Needs some testing though.

I actually haven't had any problems with the Hellkite Drake in a long time. He's pretty easy to kill if you know the trick. Or just run into the building that he perches on (using the same trick), that'll make him fly away.
The trick is that you bait him into coming down to get you. You can do this either by shooting him with an arrow, or by waiting in the area at the middle of the bridge, in 1 of the concaves (there he won't be able to hit you with his fire from his perch, so he'll get impatient and flies down). Now that you've got him to come down, you can either fight him or dash straight past him into the building.
If you wish to fight him, the best place to stand is next to his left claw. Why? Because he likes doing that fire-breathing move where he jumps straight up and breathes down. This move has a blind spot next to his left claw for some reason. Also while you are standing next to him or behind him, he only does a couple of moves. The jump+breathe move, a stomp move, and a move where he turns around and jumps backwards. It's safe to attack after the jump+breathe move, but when he turns around and jumps back, you need to run back to the middle of the bridge and go down the stairs. Wait for him to go back to his perch, then repeat the whole strategy again until he is dead.

Not possible, I tried. Boss fogs are the only fogs that you can only pass through from the correct side.
