I use small amounts of mayo, just because dry sandwiches are dry. There isn't much that I hate more than a mouth full of mayo though, like when you go out to eat and it seems like whoever made it must have used an ice cream scooper.

Harts favorite sandwich:
Bread--Vogels... if you don't know what it is its like heavy multigrain bread but delicious. One side spread with caramelised onion marmalade, the other with a little mayonaise.
Meat--Beef schnitzel crumbed with flour, egg and CRUSHED CORNFLAKES. Not bread crumbs cause cornflakes give you better crispy coating and you can keep the meat tender.
Then mixed salad, tomato and cheese, usually just edam but when I have it a few slices of cammenbert work a treat.
Kind of a pain to make the meat part for just one sandwich so this usually becomes a dinner for everyone in my flat.
