The silver knight set isn't actually the best as far as they go. Really any of the upgradeable sets are pretty good upgraded. So go for that.

Giant Set, Havel Set(Never wear full set), All three Masks. There are other armors that warrant use such as the Thorn set and as DoughGuy mentioned, fully upgraded Elite Knight is really good if your willing to invest the slabs.

High poise armor always beats out high defense armor because if you get stunlocked, then that extra defense won't mean much. Trust me on this one, both of my most powerful builds use the two most notorious stunlock weapons in Dark Souls. But its just advice...YOU CAN DO WHATEVER THE FUDGE YOU WANNA DOOOOOO

For stats: Elite Knights, Black Iron, Steel, Golem, and Havel's. For looks, it's up to you but I like the Brass set with the Helm Of Favor cause it's makes you look like a king and henceforth, a total and complete boss.

The two most notorious stunlockers are both a little bit of a pain to acquire.
The first is MLGS or Moonlight Greatsword. To get this sucker, you need to slice off Seath's tail, which is of course easier said then done, unless you know how to go about it. The MLGS requires high Intelligence to be of any real use to you, but for an Int build it's a godsend.
The second weapon is none other than the GLGS or Great Lord Greatsword. This weapon is acquired by killing Gwyn, getting back to Anor Londo on NG+, and upgrading a greatsword+10 with Gwyn's Soul. The good news? It's extremely easy to wield! It only requires 20Str and 10Dex.
As for high poise armor...assuming you want to stay at 40 Endurance, check the setup I have on my Perfect Moonlight build in my sig. I have 86 poise and can still ninja flip. Hope I helped

i actually prefer the normal knight armor because it has quite a bit more poise since elite set was nerfed in the US version for whatever reason. i mix and match mainly but it really depends on your build.

the large club is awesome for stunlocking. That long sweeping one handed R1 attack does it almost every time

The onion armour is overally pretty good medium armour. But there are plenty of good armour sets. Every set has its use.

if you want heavy armor you could buy the iron golem set from domnall, its only downfall is its lowish lightning resistence but if you mixed it with silver knight armor that problem would be fixed.

black iron is one of the best heavy armors and light compared to others. steel, cleric armor and reg knight's armor since it has more poise on the us version, not sure about everywhere else.

Paladin Armor is one of the best medium armors of the game. And also it looks awesome. After spending hours in DkS, I don't mind about min/maxing anymore. I go with looks and maybe some minimum poise (31).
