Are you caring about poise? Crown of Dusk/Crown of the Dark Sun is always great headwear for increased attack power with sorceries/pyromancies/miracles. I prefer Dusk's Crown for the added power, but Gwyndolin's helm is the safer bet if you don't want to chance it with Dusk's magic defense penalty.

If you just want to reach the high poise threshold Havel's Chest+Stone Knight Gauntlets+Hollow Soldier Waistcloth grants you 77 points to poise. Though eki's armor set ups are FAR better looking than this min/max monstrosity.
Note: ^That set up only works with the Crown of Dusk, the Crown of the Dark Sun puts you at fat roll movement/roll speed.
