yea sans isnt a single player, its just someone who uploads dark souls pvp vids that japanese players upload to niconico(jpn youtube basically). It is a great source of inspiration.

Just got it first try against a Zwei and then against a DGM. For some reason, I'm not running into any Giant's/GS R1 spammers. This is unusual...

You just need to toggle right as you're being hit. Well, let me rephrase that. In order to suffer ZERO stun, you have to toggle perfectly. There is a decent margin of error, and how off you are seems to effect the amount of stun you suffer just before escaping.
So to recap, if you toggle correctly it looks and functions just like it would if you poise tank a hit. If you're a lttle off, you stagger briefly. Practice on some NPC's. As far as I can tell, it's exactly the same in PvP as it is in PvE, so lag is a nonissue.
