All of them. Just don't do it unless you are ready to fight Gwyn and don't want to upgrade a weapon or buy something.
Before killing them use the dark hand to suck out their humanity
You can't kill Ricket of Vinheim, the lady merchant and the firelink firekeeper.
Remember, just do it when you are ready to move on NG+.

You can kill Rickert and you should. I am more than willing to give you a step by step guide to destroying that jerk. Also, the sooner the better unless you think you might want weapons upgraded along his paths.

If you want miracles, kill Petrus right after you save Reah from the Tomb.

Kill petrus just for being such a d-bag!
Honestly, Laurentius after using his shop and before he goes hollow, same with the crestfallen warrior.
Kill Ingward with a bow from outside the building he's atop of. Saves you the trouble of having to rush the ghost inside and its just a faster way of draining new londo.
Kill Lautrec right after you free him. You get the ring of favor and protection and humanity. If you want his armor you have to let him kill anastacia. =(
Killing Logan is necessary for some epic spells and a sick catalyst, but there's a whole sequence of events that you must undergo.
Killing Pharis will get you the black bow of pharis and his hat.
That's all I can think of at the moment. =)
